Keep looking at where the ball WAS. In both tennis and golf, clean contact with the ball is paramount, and in both sports, the best way to make sure you see the ball getting hit is to keep looking at the point of contact for a moment after the ball has been hit. This also keeps your head still. Remember that when the head on the end of your neck moves, the head on the end of your racquet or club moves, too.
